Budget friendly recipes are not that hard to come by these days. They grace the cover of glossy magazines. They are demonstrated on television and are the subjects of thousand of cookbooks.
But, let’s talk about real budget cooking. How do you do that?
This recipe is the perfect example. Besides the staples that I all ready had, the meat set me back just $3. I just so happen to be in Target and I really wanted skirt steak for a new recipe. Well, the skirt steak was about $8. Glancing around, I saw a flank steak for $6 with a $3 off coupon right there on top. SCORE! There really isn’t much difference between skirt and flank steak anyways. Both cuts of meat are a real treat. I feel all high class when I get to have some for dinner.
Real budget cooking is about finding what is on sale and working around that….not planning meals and hoping for a deal. The most important tool is a knowledge base of simple easy recipes so that whatever is on sale, you all ready have a recipe. This wet rub-type marinate is so versatile. It works great for beef and I can see it being used on chicken and even shrimp too. Top this with my spicy green salsa, dish out an easy side dish, and you got a quick gourmet meal.

So, are you like me and always have leftover cilantro and looking for a new recipe to use it up? You are in luck, this spicy green salsa is the perfect way to use fresh cilantro before it goes bad. It doesn't have an overly Mexican Flavor which makes it a great compliment to many different types of dishes. The ingredients are simple and very healthy.
Funny story: When I was chopping the cilantro, I dropped a small piece on my floor (clean floor). My baby crawled on over and stole it. He's still toothless and can't eat it yet. But he tried, he so tried. It took all my strength to pry his little mouth open to fetch out that one little leaf. I guess my love of cilantro is genetic.
